Here are two winter warmers to get you in the Christmas cooking mood:
Festive Beef & Ale Stew
Ingredients:
- 500g stewing steak from Country Style Meats, diced
- 1 onion, chopped
- 2 carrots, chopped
- 2 parsnips, chopped
- 1 bottle of good dark ale
- 1 tbsp tomato purée
- 2 bay leaves, fresh thyme, salt & pepper
Method:
- Brown the beef in a large pot.
- Add onions, carrots, and parsnips – cook until softened.
- Stir in tomato purée, herbs, and ale. Bring to the boil, then simmer gently for 1.5–2 hours.
- Season to taste and serve with buttery mash or crusty bread.
Christmas Roast Chicken with Honey & Thyme Glaze
Ingredients:
- 1 whole chicken from Country Style Meats
- 3 tbsp honey
- 2 tbsp butter
- 1 tbsp fresh thyme
- Salt & pepper
Method:
- Preheat oven to 180°C.
- Mix honey, butter, and thyme, then brush generously over the chicken.
- Roast for 1.5 hours or until golden and cooked through.
- Rest before carving and serve with all the trimmings – pigs in blankets, stuffing, and roast potatoes.
