Autumn is the perfect season to enjoy hearty soups and stews at home. Here are two seasonal favourites featuring our premium meats:


Classic English Vegetable & Beef Soup

Ingredients:

  • 500g stewing beef from Country Style Meats, diced
  • 2 carrots, chopped
  • 2 parsnips, chopped
  • 1 onion, chopped
  • 2 sticks celery, chopped
  • 2 potatoes, diced
  • 1.5 litres beef stock
  • 2 bay leaves
  • Salt and pepper to taste

Method:

  1. In a large pot, brown the diced beef lightly.
  2. Add onion, carrots, celery, and parsnips, and sauté for 5 minutes.
  3. Pour in beef stock and add bay leaves. Bring to a boil, then reduce to a simmer for 1–1.5 hours.
  4. Add potatoes in the last 20 minutes of cooking.
  5. Season with salt and pepper and serve piping hot with crusty bread.

Hearty Lancashire Lamb Stew

Ingredients:

  • 600g lamb shoulder, diced
  • 2 carrots, chopped
  • 2 parsnips, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 500ml lamb or vegetable stock
  • 1 tbsp tomato purée
  • Fresh thyme and rosemary
  • Salt and pepper to taste

Method:

  1. Brown the lamb in a large pan, then remove and set aside.
  2. Sauté onions, garlic, carrots, and parsnips until softened.
  3. Return the lamb to the pan, stir in tomato purée, herbs, and stock.
  4. Cover and simmer gently for 1.5–2 hours until the lamb is tender.
  5. Season to taste and serve with mashed potatoes or crusty bread.
