From the Beginning
As a boy brought up around farming in the Yorkshire Dales, I always had a keen interest in animals and developed a passion for Butchering. Wanting to learn more, I started an apprenticeship at a local Butchers shop where I could learn traditional butchery skills. I stayed here for 8 years before venturing on to sell fruit & vegetables on Clitheroe Market.
Having worked on the markets for 15 years , I would always find myself thinking of owning a Butcher’s shop. The dream would be to support local & British farmers and supply the local community with top quality, great value produce.
After meeting my partner Heather, who happened to have a son (Phil) who was interest in butchering, my dream became a reality and we opened our first Butcher’s shop in Clitheroe in 2007 called ‘Countrystyle Meats’. Here I was able to teach Phil everything I knew.
We would attend weekly auctions to select quality cattle and lambs, making sure all of the produce was well cared for. The quality spoke for itself and our little shop soon became the place to go, and with customer demand growing, one of Heather’s daughters (Laura) soon joined the team.
In 2011 after out growing our premises, we moved to our current site at Lancaster Leisure Park where we created a large Farmshop to showcase our butchery skills and quality produce. Even today, we still focus on local and small businesses, cutting, and preparing all of our meat on site.
Our specialist Butchers are always on hand to offer advice or prepare any cuts required, nothing is too much trouble. The Butchery offers fresh quality meat products ranging from the more traditional cuts such as beef roast or leg of lamb, to more contemporary choices such as stuffed chicken fillets, stir fry’s and marinated meats as well as our award winning sausages and home cured bacon.
